Baked Salmon

The jury is out with this meal as to whether it is any better than my baked salmon with lemon and parmesan, though it was nice for a change and has some really lovely flavours. This is another recipe from instagram. I served mine with greens and roasted new potatoes. I made it for guests recently as it was such a quick meal to prepare and could even be made ahead of time.  INGREDIENTS 2 salmon fillets 2 tbsp brown sugar ½ tsp smoked paprika or regular ½ tsp garlic powder Salt and pepper 2 tbsp Dijon mustard Topping 1/3 cup panko breadcrumbs ½ cup finely chopped parsley 2 tbsp of melted butter salt Zest of one lemon Juice of one lemon Method  1. Add brown sugar, smoked paprika, garlic powder and salt and pepper to small bowl. Mix. 2. In another bowl add the panko breadcrumbs, parsley, salt and melted butter, mix well. 3. Spread Dijon over salmon, pat brown sugar mixture over top and top with panko topping. 4. Bake at 200c, until salmon is cooked to your preference. Squeeze lemon juice
